Situated on a ridge over the Tuscan hills of Radda-in-Chianti, the fortified village of Volpaia with its medieval origins is home to the estate of Castello di Volpaia. Within the castle walls of Volpaia is the home of the Stianti family who produce Castello di Volpaia Extra Virgin Olive Oil, obtained from the estate's classic Tuscan olive varieties. The 10th century church as pictured on the Castello di Volpaia label is currently used as a wine cellar.
Giovannella Stianti and her family extract their oil using the sinolea technique. Frantoio, Leccino and Moraiolo olives are crushed in a stone mill and then passed through the sinolea machine. Hundreds of tiny steel blades comb through the olive paste, gently pulling the fresh oil from the solids. The sinolea yields are low, but the oil, so delicately handled, is extraordinarily pure and has a low acidity.
The olive trees at Castello di Volpaia are in the perfect setting for producing a fruit of exceptional quality. The resulting oil has a rather dense, transparent green color and intensely fruity nose with a hints of unripe tomato and artichoke. Castello di Volpaia's rich thick texture is dominant, carrying a lengthy ripe fruit and mildly spicy finish. Perfectly matched with simple foods such as fresh greens, grilled meats, or a bean salad.
Each bottle contains 17 fluid ounces of Castello di Volpaia Extra Virgin Olive Oil from Radda in Chianti, Tuscany, Italy.
