Olive Oil should be stored in a cool place, about 60° to 70° F however there is no need to refrigerate it. It’s best to keep it away from the stove and windowsills where heat is generated. Olive oils generally can be stored for about a year to a year and a half from their harvest date.
Our Olive Oils last much longer than mass-produced lower grades of “olive oil” which have higher acidity and tend to become rancid more quickly.
Refrigeration does not harm most grades of olive oil, but it is not recommended for expensive extra virgin varieties because the flavor may be affected due to condensation.
Flavor, color, and consistency vary, like fine wines, due to different olive varieties, location, and weather. The olive oils of some small producers are treated and priced like fine vintage wines.
When cooking with olive oil, save your extra-virgin expensive oils for salads, dressings, or dipping slices of crusty bread. Replace your butter on a baked potato with an olive oil or drizzle it on fresh pasta or cooked vegetables or brushed onto fish or meat before serving.
When sautéing or frying, use either a combination olive oil (one that is simply a blend of extra virgin and regular olive oil) or a straight olive oil. Save your extra-virgin olive oils for as a finishing touch to a meal and savor the flavor!
